Nana's Broccoli & Cauliflower Soup

1 head Cauliflower, cleaned and divided
1 head Broccoli, cleaned and divided
1 Leek, chopped
2 Celery Leafy Tops, chopped
1 Garlic clove, chopped
½ pkg. Turkey Bacon, cut into small pieces
1 carton Chicken Broth
1 Carrot, shredded
2 med. Potatoes, baked, peeled, and cubed
6 Tbl. Butter
2 tsp. Chicken Consommé
½ qt. Half & Half
1 c. Cheddar/ Monterey Jack cheese, shredded
Salt & Pepper to taste


Clean and cut cauliflower & broccoli into sections away from stem. Put in steamer for 30 mins.

In an 8 qt. pot, cook bacon until cooked.
Add leek, celery, and garlic; cooking until tender.
Add chicken broth, steamed cauliflower & broccoli, carrot, butter, and chicken consommé.
Continue to stir and simmer.
Add potatoes and Half & Half.
Salt and pepper to taste.
Blend ingredients with submersible blender until all is puréed.
Add cheese and stir.

Serve hot.
